The flagship washing station is Dumerso, acquired 12 years ago and named for the village where it is located in the Yirgacheffe district. This focus on processing and milling produces extremely stable and delicious coffee each season. Led by the dynamic sister team of CEO Hirut Birhanu and Manager Mahder Birhanu, Dumerso is a family endeavor that is anchored in Yirgacheffe and extends its reach to several other areas of Ethiopia. After each harvest these coffees are sorted by screen size, as well as density. So all beans were not sourced by the same group. Two came from one buyer and the other two came from another buyer. I have finished two bags and about 1/4 into two other bags. I had four different coffees from Onyx and all four where average at best. The work that is put into processing these coffees is upheld by their dry mill in Addis Ababa. Onyx seems to be popular so I assume I just have different taste. From its wetmill in Gedeb, SNAP works with 486 smallholder producers to produce complex and floral coffees that are outstanding examples of what Yirgacheffe coffees can be. Customer service is its own metric, and if you arent happy with their response you should let them know. I even had a few 2 month old roasts that I enjoyed. We suggest trying Onyx Tealight which has organic oats and honey along with black tea and cinnamon to create a complex sweetness and silky mouthfeel tea experience. this is our fifth year to carry coffee from this mill and we are excited about the solace it brings. Age is real, but it confirmed my suspicion that coffee can taste great 4-6 weeks past the production date. it’s extremely clean and silky in texture, animating complex earl grey and bergamot notes. This washed coffee from Ethiopia exhibits one of our favorite profiles.
